Sylvain is an ardent proponent of the Marsannay and Chenôve terroirs working with Aligoté, Chardonnay and Pinot Noir. Pataille’s unwavering dedication to the principles of organic farming and minimal intervention winemaking is truly inspirational despite the setbacks in 2016. Yet, he remains devoted and continues to work his vines manually. He ages his wines for extended periods, often exceeding two years, with minimal sulfur. The wines exhibit sincere, endearing personalities bursting with vitality, and merit attention.
